These cute bites pack the perfect punch of peanut butter and chocolate in a bite sized portion. The coconut adds a nice hint of flavor and chewiness to the oat based snack. Rounded off with a scoop of vanilla protein powder and a splash of vanilla extract, these peanut butter chocolate chip energy bites provide enough nutrition to make a worthwhile snack.
Unlike chips or pretzels, these PB bites have protein from the peanut butter and protein powder, which will leave you fuller for longer. The energy bites are sweetened naturally with honey, so there's no need to worry about added processed sugars.
By making your own energy bites at home, you know exactly what is going into your snacks. To make the energy bites less 'naughty', use an all natural peanut butter and cacao nibs in place of the chocolate chips. Substitute any of the ingredients with something you know you'll like to customize these bites!
These bites are the perfect jumping off point for many more flavor combinations or substitutions. Don't have protein powder? Use some chia seeds. No peanut butter? Almond or cashew butter will work! Don't like coconut? I used to hate coconut and have a very sensitive palate, but these don't taste very much like coconut because the peanut butter serves as the prominent flavor.

No Bake Peanut Butter Energy Bites
These cute little peanut butter energy bites pack the perfect punch of peanut butter and chocolate in a bite sized portion.
Ingredients
- 1 cup oats
- ⅔ cup toasted shredded coconut
- ½ cup peanut butter
- ½ cup mini chocolate chips
- ⅓ cup honey
- 1 scoop protein powder
- 1 teaspoon vanilla
- Water to thicken mixture
Instructions
- Combine all ingredients in a large bowl.
- Using cookie scoop, make 15 equal sized bites and place on parchment paper.
- Refrigerate until firm and then transfer to an airtight container.
- Refrigerate and enjoy for up to one week.
- **Using cookie scoop (tbsp size) makes about 15 energy bites.

Hi Deanna! I did try with chocolate protein powder this weekend - and I think I actually like it better than with the vanilla protein powder! I think either will work great 🙂
