This Fudgy Mug Brownie is perfect for when you want a little something sweet at night but don’t want to be haunted by a big tray of brownies on the counter in the morning. With just a handful of pantry ingredients, it’s hard to not make this mug brownie!

Ingredients
  • 1/4 cup all purpose flour
  • 1/4 cup granulated sugar
  • 2 tbsp cocoa powder
  • 2 tbsp milk
  • 2 tbsp vegetable oil
  • 2 tbsp chocolate chips
Instructions
  1. Grease a mug or ramekin with nonstick cooking spray.
  2. In a small bowl, add flour, sugar, cocoa powder and salt and mix to combine.
  3. Add milk, oil, vanilla extract (if using) and chocolate chips. Stir wet and dry ingredients until combined.
  4. On high power, microwave for 1 min 10 seconds. If mug brownie appears to be underdone, heat for an additional 15 seconds.
  5. Top with a scoop of your favorite ice cream or whipped cream. Enjoy!
Recipe Notes

* Your cooking time may vary on the strength of your microwave. If you're making a half serving of this mug brownie recipe, I recommend starting with 45 seconds in the microwave followed by 15 second increments until it appears done.

* For a full serving, 1 minute and 10 seconds was perfect. The top looked a little underdone but was totally cooked throughout.

* The mug brownie has no eggs so is theoretically safe to eat as batter, although I don't recommend it.
