Combine yeast, honey, olive oil and water in a bowl. Stir and let rest for 10 minutes. Gather toppings and have them at the ready by the grill.
Add flour and salt and mix with dough hook attachment until combined. Let dough rest for 5 minutes in the bowl.
Turn out dough onto a lightly floured surface. Cut into two smaller dough balls.
Work each individual ball into a flat circle using a rolling pin or your hands. Work with what you've got!
For transporting purposes only, put each unbaked flat dough onto a pizza pan, cookie sheet or large serving platter.
Using an olive oil soaked paper towel or cooking spray, grease the grates of your grill so there's no dough sticking later on.
Preheat your grill to at least 350 degrees.
Lay pizza dough flat on grill grates and cook one side until crispy, about 3-5 minutes. Carefully use a spatula or tongs to flip the dough onto its other side.
Working quickly, add your sauce and toppings to the crispy grilled top. When finished adding toppings, close the grill cover and continue to cook until toppings are melted and bottom dough is crispy, about 3-5 minutes.
When pizza is done to your liking, remove from grill and turn all burners off. Slice and serve as you would any other pizza!
