Preheat a skillet over a medium high flame. Drizzle pan with olive oil and add in ground turkey. Cook meat until browned, about 10 minutes.
Drain liquid from the canned diced tomatoes. Add tomatoes and taco seasoning to browned turkey and stir. Heat for an additional 1-2 minutes.
Add cooked rice to the skillet and stir to combine.
Evenly spread cheese over the entire skillet. If using the broiler, preheat broiler to 400 degrees and heat until cheese is bubbly and brown. If you prefer to not use the broiler, cover skillet with a lid and leave over medium low flame for 2-3 minutes or until cheese is melted.
Scoop desired portion out of the skillet and top with sour cream or fresh herbs as desired.
