These Easy Asian Inspired Roasted Vegetables are perfectly roasted and are a great way to sneak in more vegetables!
Preheat oven to 400॰F. In a medium sized bowl, lightly coat vegetables with sesame oil. Season vegetables to taste with salt and pepper.
Spread Asian stir fry vegetables out evenly on a foil or silicone baking mat lined baking sheet. Allow veggies to roast until slightly browned and tender, about 16 minutes.
Remove from oven and sprinkle with sesame seeds. Serve alongside Lean Cuisine Sesame Chicken meal for a delicious veggie-infused lunch or dinner when you’re in a pinch.
